We're a micro-bakery tucked between the trees in Boone, NC. Every loaf starts simple and ends slow. We bake a variety of breads, most naturally leavened with a long, cold fermentation. That extra time pulls flavor out of the grain and makes the bread easier on your gut.
Our grains come from people growing in an environmentally friendly way. Spelt, einkorn, kamut, and rye each show up in our bread depending on the loaf and the week.
